Banana Oat Chocolate Chip Pancakes

A healthy and delicious breakfast that even kids will love. These banana oat pancakes are full of energy boosting ingredients that will set you up for the rest of the day.

A complex carbohydrate, these banana oat pancakes are high in potassium, fibre and protein as well as vitamin B6, iron, magnesium and manganese.

  • 1 mashed banana
  • 1 egg
  • 50ml plant-based milk
  • 2 sachets of instant oats, or 50g of finely ground rolled outs
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 25g dark chocolate, chopped
  • Coconut oil

To serve

  • Natural yoghurt
  • Fresh berries
  • Honey

1. Mix mashed banana, egg and milk together

2. Stir in oats and baking powder and then add vanilla extract (optional). The mixture should be thick and spoonable.

3. Melt a small amount of coconut oil in the pan. Other oils can be used if you don't have coconut oil. Once the oil is ready add 2 heaped tablespoons of the mixture per pancake to the pan.

4. Wait 30 seconds and then press in the chopped chocolate into the top of the pancakes.

5. Cook for 1-2 minutes until the base is set before flipping, then cook on the other side for around 1 minute.

6. Plate up and add the natural yoghurt, fresh berries and a drizzle of honey to serve.

Tip: Make the mixture the night before and keep in the fridge in a sealed container. This makes for a healthy, but super-speedy breakfast!
