This Moroccan inspired Lentil Salad recipe is a protein-packed, antioxidant-rich dish that’s ideal for slowly releasing energy throughout the day.
This recipe can easily be made vegan by adding vegan cheese.
1 tin rinsed and drained green lentils
2 cloves of garlic
1 red bell pepper
½ medium red onion
½ red chilli (deseeded)
Handful of cherry tomatoes
½ tbsp honey or agave
1 tbsp smoked paprika
1 tsp ground cumin
½ tsp ground turmeric
1 tbsp lemon juice
Feta cheese or vegan alternative
Bunch of chopped parsley
1. Warm through green lentils in a pan, then drain and leave to cool while you make the sauce.
2. Add your vegetables, honey, paprika, cumin, turmeric and lemon juice into the blender and blend together until smooth.
3. In a bowl, stir the cooked, drained lentils into the sauce and mix together well.
4. Crumble feta (or vegan alternative) on top and add fresh parsley and serve.
